The selection of wines was done by the chief sommelier Dmitry Vologa (Grand Hotel Europe, Una). The emphasis was on the Italian position. Among them is a sparkling Emilia-Romagna region, made by way of a petanate. Its peculiarity is that the unfertilized wine is simply poured into a bottle and left to be saturated with carbonic acid. As a rule, it is a lightly carbonated and slightly sweetish drink with a deposit - a pleasure for aesthetes.
